RECIPE: Mini Omelet Muffin Recipe
This is a great make-ahead breakfast that's easy, simple and healthy
Mini Omelet Muffin Recipe
Ingredients
nonstick cooking spray
6 egg whites
3 whole eggs
1/4 teaspoon kosher salt
black pepper
½ cup Jimmy Dean turkey sausage crumbles
3 tablespoons thawed frozen spinach, drained
3 tbsp diced mushroom
3 tbsp diced onion
3 tbsp diced bell pepper
2 oz fat-free shredded cheddar
Directions:
Preheat the oven to 350F. Spray muffin tins with cooking spray.
In a large bowl whisk the eggs, season with salt and pepper.
Add remaining ingredients and mix together.
Fill muffin tins, place on a cookie sheet and bake for 20-25 minutes, until set.
Makes 6 mini muffins
