RECIPE: Mini Omelet Muffin Recipe

This is a great make-ahead breakfast that's easy, simple and healthy


Mini Omelet Muffin Recipe


Ingredients

  • nonstick cooking spray

  • 6 egg whites

  • 3 whole eggs

  • 1/4 teaspoon kosher salt

  • black pepper

  • ½ cup Jimmy Dean turkey sausage crumbles

  • 3 tablespoons thawed frozen spinach, drained

  • 3 tbsp diced mushroom

  • 3 tbsp diced onion

  • 3 tbsp diced bell pepper

  • 2 oz fat-free shredded cheddar


Directions:

  1. Preheat the oven to 350F. Spray muffin tins with cooking spray.

  2. In a large bowl whisk the eggs, season with salt and pepper.

  3. Add remaining ingredients and mix together.

  4. Fill muffin tins, place on a cookie sheet and bake for 20-25 minutes, until set.

Makes 6 mini muffins
